🔎 About the Role
As the Cluster Senior Executive Sous Chef, you will oversee and coordinate culinary operations across multiple properties within the Mauritius cluster. Reporting directly to the Cluster Executive Chef, you will play a pivotal role in delivering exceptional dining experiences, maintaining consistency in culinary excellence, and leading a diverse team across two flagship properties.
💼 What You’ll Do
- Lead Multi-Property Culinary Operations: Oversee kitchen operations across the cluster, ensuring all teams meet the highest standards of quality, efficiency, and consistency.
- Deliver Culinary Excellence: Monitor and maintain the preparation and presentation of dishes, ensuring they align with RIU’s reputation for exceptional dining experiences.
- Drive Innovation in Menus: Collaborate with the Cluster Executive Chef to design and refine menus that reflect the uniqueness of each property, utilizing seasonal ingredients and aligning with luxury all-inclusive standards.
- Team Development and Leadership: Lead, mentor, and train Sous Chefs and culinary teams across both properties, fostering a culture of collaboration, excellence, and continuous improvement.
- Standardize Operations: Ensure consistency in recipes, portioning, and presentation across all outlets, upholding RIU’s brand standards.
- Efficient Resource Management: Manage inventory and procurement processes, optimizing costs while ensuring availability of high-quality ingredients.
- Ensure Compliance: Uphold strict food safety, hygiene, and sanitation practices, ensuring compliance with all health regulations and standards.
- Performance Monitoring: Evaluate the performance of culinary teams, providing constructive feedback and guidance to enhance operations and maintain the highest levels of guest satisfaction.
✔️ What We’re Looking For
- Extensive Culinary Experience: Proven experience in a Sous Chef role or similar leadership position within a professional kitchen, preferably in a four/five-star or all-inclusive hotel.
- Strong Leadership Skills: Ability to lead, inspire, and develop a diverse team, ensuring operational excellence and a positive workplace culture.
- Culinary Expertise: Advanced knowledge of cooking techniques, flavor profiles, and international cuisines, with a creative approach to menu development.
- Organizational Proficiency: Excellent multitasking skills and the ability to perform under pressure in a high-volume, high-quality kitchen environment.
