🔎 About the Role
This is a prestigious opportunity to join RIU Hotels & Resorts as an Executive Sous Chef. As the second-in-command to the Executive Chef, you will act as the engine room of our culinary operations. You will oversee all kitchen departments, including Hot Kitchen, Cold Kitchen, Butchery, and Pastry/Bakery—ensuring that high-volume service never compromises our commitment to high-quality, world-class dining.
💼 What You’ll Do
Multi-Outlet Leadership: Direct and synchronize operations across all kitchen departments (Hot, Cold, Butchery, and Pastry/Bakery), ensuring seamless service for high-volume international buffets and specialty dining outlets.
Strategic Menu Management: Design, implement, and refine diverse menus with the guidance from Executive Chef that cater to a global palate, ensuring variety, nutritional balance, and aesthetic excellence.
Accuracy Stock Control: Execute rigorous inventory management and procurement strategies. You will be responsible for minimizing food waste and maintaining optimal stock levels in a remote island environment.
Team & Productivity Oversight: Mastermind the kitchen’s human capital by managing complex attendance rosters, optimizing man-hours, and ensuring peak performance during high-occupancy periods.
Quality Assurance (QA): Act as the final gatekeeper for food quality. Conduct daily briefings and line checks to ensure every dish meets RIU’s gold standard before reaching our guests.
HACCP & Safety Knowledge: Maintain absolute compliance with international food safety and hygiene protocols, leading the team through regular audits and rigorous cleaning schedules.
Succession Planning: Identify and cultivate high-potential talent within the brigade, providing the technical training and mentorship needed to build a world-class culinary team.
✔️ What We’re Looking For
High-Volume Mastery: A seasoned culinary leader with a proven track record in large-scale luxury resorts or 5-star hotels, capable of flawlessly managing large-scale, high-volume daily meal services.
Technical Expertise: Comprehensive knowledge across all culinary disciplines, with the ability to troubleshoot issues in the Butchery as easily as in the Bakery.
Financial Insight: Advanced proficiency in food cost analysis, yield testing (particularly in Butchery), and the ability to interpret P&L data to drive kitchen profitability.
Command & Control: Exceptional organizational skills with the ability to maintain composure and lead a large, multicultural kitchen brigade under high-pressure, fast-paced conditions.
Gastronomic Knowledge: A deep understanding of international cuisines, dietary trends (vegan, gluten-free, etc.), and the cultural nuances of a diverse global clientele.
Administrative Excellence: Proficient in using kitchen management software and HR systems for attendance tracking, stock ordering, and performance documentation.
Adaptability: A proactive problem-solver who can navigate the unique logistical challenges of a remote resort location, ensuring consistent supply and quality despite external variables.
