🔎 About the Role
As the Chief Kitchen Steward, you are a key pillar of our culinary operations. You will manage the entire stewarding department, ensuring that dishwashing processes, equipment sanitation, and waste management are handled with 5-star precision. Working closely with the Executive Chef and Executive Sous Chef, your mission is to maintain a "Gold Standard" of hygiene while managing operating supplies (OS&E) and leading a large, dynamic team in a fast-paced resort environment.
🌟 What You’ll Do
Operational Leadership: Manage the daily dishwashing process, specialized equipment cleaning, and refuse disposal to ensure the kitchen remains a sanitary, high-efficiency environment.
Staff Supervision & Development: Oversee all personnel matters including rostering, training via "train-the-trainer" programs, and ensuring the team adheres to RIU’s grooming and professional standards.
Material & Breakage Control: Maintain minimum par stocks of kitchenware through strict inventory management, weekly inspections, and proactive breakage control.
Hygiene & Safety Compliance: Implement local Thai health authority requirements and RIU global sanitation standards, ensuring all chemical usage and waste disposal meet HACCP regulations.
Resource Management: Contain departmental costs within established budgets, manage purchase orders for cleaning supplies, and contribute to the hotel’s energy conservation programs.
Administrative Oversight: Maintain detailed logbooks, coordinate repair and maintenance work orders, and conduct quarterly inventories to ensure the kitchen is fully equipped for 5-star service.
✔️ What We’re Looking For
Experience: Minimum 7 years in kitchen stewarding, with at least 2–3 years in a leadership role within a high-volume 4 or 5-star resort.
Technical Knowledge: Deep understanding of industrial dishwashing equipment, chemical handling, and waste management.
Leadership: Strong ability to manage and motivate a large multicultural team, handling everything from recruitment to disciplinary procedures.
Compliance: Solid knowledge of HACCP and Thai local health department sanitation requirements.
Other Requirements: Strong command of English and Thai is essential.
