🔎 About the Role
As the Senior Pastry Chef is the head of the Pastry section, you will take ultimate ownership of the Pastry and Bakery section, ensuring that every dessert, bread, and pastry exceeds the standards of RIU’s global brand. Serving as the primary bridge between the Corporate Kitchen’s vision and our local execution, you will direct a large, talented team during the critical pre-opening phase and into full operations. This senior-level role demands exceptional technical artistry, rigorous financial strategy, and visionary, hands-on leadership to inspire and elevate the entire section.
🌟 What You’ll Do
Section Leadership: Direct the entire pastry and bakery operation, auditing all menus provided by the Corporate Kitchen to ensure 100% brand consistency, flawless recipe adherence, and seamless integration with the resort's broader culinary strategy.
Operational Excellence: Govern daily departmental activities, master production schedules, and act as the final authority to guarantee every product meets our "Gold Standard" prior to guest service.
Resource & Financial Management: Take full accountability for the pastry unit’s budget, driving inventory efficiency, cost-control initiatives, and advanced management systems to maximize profitability and eradicate waste.
Team Management: Lead, develop, and strategically schedule the entire pastry team, fostering a culture of elite technical skill, continuous learning, and high-level productivity across all ranks.
Hygiene, Safety & Environment: Champion strict hygiene compliance and superior safety protocols across all work, production, and storage areas, guaranteeing an impeccably clean, audit-ready environment at all times.
✔️ What We’re Looking For
Experience: Minimum 7–10 years of experience in high-volume culinary operations, with at least 4–5 years acting as an Executive Pastry Chef, Senior Pastry Chef, or Head of Pastry in a luxury 4- or 5-star resort environment.
Technical Skills: expertise in international pastry, bakery, and Asian-inspired desserts, alongside comprehensive knowledge of complex allergen control and advanced dietary requirement management.
Leadership: Demonstrated executive capability to inspire, manage, multicultural team, with a proven track record of mentoring junior chefs and mid-level managers.
Education: Degree or Diploma in Pastry Arts, Hospitality Management, or a related field. Advanced HACCP & Food Safety certifications are mandatory.
Languages: Strong command of English and Thai (spoken and written) is required for seamless coordination with Corporate executives and the local team.
